Oysters with shallot and cabernet sauvignon dressing
White truffles and celeriac mousse with apple jelly
Cured fallow deer with candied beet and bitter chocolate

Devon lobster with spider crab mousseline, organic salmon tartare and Japanese garden salad
Fillet mignon of Limousin beef poché, fricassée of white and purple baby carrots and turnips, broccoli purée and pinot noir sauce
Baby peppers filled with ratatouille, polenta chips, grilled zucchini, white asparagus spearhead and piquillo sauce
Roasted grouse with cherries and cognac, highland burgundy pommes dauphine and game pâté on croûton

Swan pâte à choux filled with strawberry mousse on blueberry sauce
Mountain berries glacier with warm chocolate sauce
Champagne jelly with love cherry
